Bamboo Sushi, a sustainable sushi chain out of Portland, Oregon, is opening its first Arizona restaurant at The Switchyard. The nearly 3,200 sq ft spot will serve signature rolls, shareable plates and happy hour specials, joining Shake Shack and Snooze at the Ellsworth Loop and Ocotillo development.
